I am a carpenter , do alot of drywall but usally a room eg. a bathroom or a kitchen . Do any of you guys use (midweight ) all the way through. Seems to be ok or should I be moving to plus 3 for 2nd and 3rd coats . I do thin down 3rd coat pretty good with the Midweight

Midweight is a vinyl formula and most drywall finishers use gypsum based. There’s not much of a difference other than cost and chemical compositions. I wouldn't use vinyl compounds myself since I've never studied the chemical reactions it has with common paints and other materials used locally but whatever.

generally, i would tape with green, and purple for everything else. smaller job, i tape with ez, block with ez, skim with purple.
